hey
Gib = the corpse of the creature is destroyed and out comes blue souls for anyone to take.

So the higher the gib-chance, the higher chance the creature will gib

Try it. Click the option: Always gib, and see for yourself.

Is there anything that affects the gib chance?
like the amount of damage taken?

Yes, for example, a Manahoar has almost no health left, and get hit by a dragon. I think it's more likely to gib. Massive damage in a single punch. I'm not sure about this though.
